Oh yes, a Sweet Buffalo-Style Grilled Chicken Recipe!

I have a little story to tell you guys. It’s kind of depressing, but something good came of this, so it wasn’t completely terrible. A few days ago there was a post on Low Carb Friends about the carbs in Wal-mart’s deli hot wings. I have always been a hot wing addict, especially when it comes to Wal-mart’s deli wings. They’re slightly sweet, crispy, and they’re not drenched in sauce (a plus for me).  I’m not like most people who are anxious to pop into their container of fresh hot wings.  When I buy them, I walk around the store a while and let the sauce stick to them puppies.  I’ve always thought they tasted better after sitting in their sauce for a while.  Anyway, since I had to pick up some medication from Wal-mart, I decided to stop by and get some wings.

I made my trips around the store, grabbing a couple of things I needed like heavy whipping cream, broccoli, and splurged on a bottle of Torani SF Caramel Syrup. I made my way over to the deli counter, excited that I was going to get me some of my favorite wings. It’s been quite a few years since I had them. How many years exactly? Well the last time I purchased them was in college. So that’s quite a few.

I stood at the counter looking at all the nummy foods, seeing what could be low carb or moderately low carb. The first item I picked out was a rotisserie chicken, a must for feeding the family since I nearly always buy one for lunch when I’m picking up a few groceries. As I looked around, I realized that they had a lot of breaded wings now. It didn’t occur to me that all the wings were breaded. So I ordered a pound of them. I walked off smiling because I could smell the sauce through the container and then I decided to look down. . .and felt a twinge of disappointment.

If it weren’t for the rotisserie chicken, I wouldn’t have had much of a lunch, but the wings were enjoyed by my mom.  At least someone was able to enjoy them. till, I wished these were the wings that I had always enjoyed. Sure, I could splurge and eat one, but the breading has wheat flour and that’s a no-no for me.

Now you’re probably wondering how anything good came of this. Well, luckily for you, you directly benefit from my little trip of disappointment. How so? I set to work the next day on a recipe for some good wing sauce. It’s basic and sweet, but man is it delicious. This can be used on wings or any cut of chicken really. As a matter of fact, this recipe is for buffalo-style chicken breasts. Behold, the deliciousness!

 

Easy Peasy Sweet Buffalo-style Grilled Chicken Breasts

 4 Boneless Skinless Chicken Breasts

1/2 Cup Hot Sauce (any brand will do, make sure it’s flavorful)

2 TBSP Butter

Honey or other sweetener (about 1tsp is what I used)

Seasoning to taste (I used Mrs. Dash Southwest Chipotle)

If you have a favorite smokey seasoning, feel free to sprinkle it on the breast prior to cooking. Tenderize chicken so that it will cook quickly, evenly, and the sauce will coat well. Grill chicken for 5-6 minutes. While chicken is cooking, in a small pot heat butter on medium until completely melted. Add hot sauce and stir.   Add honey or sweetener to desired sweetness.  Stir sauce again and let bubble for about 20 seconds. Sauce should be thick at this point. Turn off burner and set pot aside. Remove chicken from grill, sit inside a Tupperware container and pour wing sauce on top. Place lid on container and shake container to distribute sauce on chicken. Shake for 10-20 seconds to ensure sauce has covered the chicken. Serve chicken with your favorite sides! Distribute extra sauce between plates for a little dipping. Serves 4 people.

The first time I made this, I neglected to tenderize the chicken, so the cooking time was a REALLY long. They were small breasts, so the amount of sauce was enough to leave some for dipping. This has always been a family favorite. I made the sauce with Splenda, which I recommend if you’re making this LC.  Aspartame is not suitable for cooking, so it will be pretty bitter.  Like I mentioned previously, feel free to use this on any cut of chicken. This would go great with some blue cheese dressing, which I’m terrible at making. The sweetness of the Splenda definitely make this sauce addictive. I had this again tonight and wished there had been more sauce. Next time I’m going to make a double batch!
