LC Variation of Alice Springs Chicken

You know, I don’t eat in  restaurants much anymore. There were things I use to love ordering and now. . .well. . .there’s no way I would order them. The carb count is too high and in some cases way too expensive! If I want something badly enough, I can try to recreate it at home. Sometimes I get fairly close and others is a complete miss.

Today brother is glued to his usual spot at the tv, playing Skyrim and giggling every time he knocks somebody through the air (he is always giggling so he does this a lot!). I’m at my computer, surfing the internet and wondering what the heck we should have for lunch. We recently purchased a new George Foreman grill, so I figured we should use it for lunch. Grilled chicken sounded great, but what would we have with it?

So I had a little idea as I was grilling up the chicken and cooking our side of bacony green beans. What if I make my own version of Alice Springs Chicken? It’s been maybe 15 years since I’ve had it, so I’m sure I’d miss some ingredients but I would try my best to get it close to what I remember. Even if this isn’t close, it’s amazingly delicious. All you need is a George Foreman or similar grill and a microwave to make this super easy!

AmusedElf’s LC variation of Alice Springs Chicken

1 large chicken breast

2-4 strips of bacon (depends on how much you want)

2 mushrooms

Mrs. Dash Southwest Chiptole seasoning or similar

2 slices of Swiss cheese (or preferred cheese)

 chives (optional)

Honey Mustard Sauce

2 tbl Mayonnaise

1tbl mustard

1 pack sweetener of choice

a little milk or water for thinning (add to your desired thickness)

Cook bacon strips on grill till they’re a nice golden color. While they’re cooking tenderize chicken well. Cut into half so that you have two decent size pieces. Season breasts well with seasoning. Remove bacon from grill and load chicken on and cook for about 6-7 minutes a piece (my GF guide said as little as 5 but I like to be safe). Slice up mushrooms and prepare honey mustard sauce. Remove chicken from grill and put on a microwave-safe plate. Top chicken with mushrooms, cheese, and bacon. Chop a few scallions and sprinkle on chicken. Drizzle a little honey mustard and cook on high for 1 minute. Serve with your favorite side dish.

Serves 2 people or one extremely hungry person!

 Please note that in the pic I put my sauce on the side.  My brother wanted “dipping” sauce so I kept it thick just for him. 🙂  This is very good chicken and didn’t come out dry at all (I love my grill!). The sauce was a little sweet so if you must cut the sweetener down to half a pack. We only have regular mustard but I would have loved this with spicy. I plan to make this again very soon because I LOVE it! The seasoning is one thing that I felt like I MUST have. It gives it kind of a mock outdoor grill taste and I think adds good seasoning. Since it’s been so long since I’ve had the original, I imagined the seasoning is a little like the Southewest Chipotle. There are places that serve a pretty similar chicken to Alice Springs but use other sauces so they’re “different.” On my prom night I went to a steak house that served a similar chicken but with a BBQ sauce. You can dress up this chicken in a lot of ways, so the different flavors you can add are limitless.
